Les trois s\u0153urs \u2013 le ma\u00efs, les haricots et la courge \u2013 sont communes \u00e0 de nombreuses cultures autochtones. Plant\u00e9s ensemble, les haricots utilisent les tiges du ma\u00efs comme tuteur pour grimper et pousser tandis que la courge offre une couverture v\u00e9g\u00e9tale pour retenir l&rsquo;humidit\u00e9.<span class=\"s1\"><span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<p class=\"p1\">\u00ab\u00a0Ces trois aliments fonctionnent non seulement ensemble \u00e0 mesure qu&rsquo;ils grandissent, mais aussi lorsqu&rsquo;ils sont consomm\u00e9s\u00a0\u00bb, a d\u00e9clar\u00e9 Scott. \u00ab Les courges renferment une multitude de vitamines, de fer, de fibres et d&rsquo;antioxydants, tandis que les haricots contiennent des prot\u00e9ines, des graisses et des nutriments qui renforcent le syst\u00e8me immunitaire. Son utilisation des ingr\u00e9dients est r\u00e9gie par le calendrier. \u00ab J&rsquo;aime g\u00e9n\u00e9ralement travailler avec ce qui est en saison afin d&rsquo;\u00eatre plus durable. \u00c0 l&rsquo;automne, ce serait les Trois S\u0153urs et les l\u00e9gumes-racines.\u00a0\u00bb<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-120581\" src=\"https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-300x200.jpg 300w, https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-1024x683.jpg 1024w, https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-768x512.jpg 768w, https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-1536x1024.jpg 1536w, https:\/\/destinationindigenous.ca\/wp-content\/uploads\/2022\/01\/Scott-3-2-2048x1365.jpg 2048w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p class=\"p4\"><b>Salade Takwakin des Trois S\u0153urs<\/b><\/p>\n<p class=\"p4\">(Takwakin signifie \u00ab\u00a0automne\u00a0\u00bb dans la langue des Omushkegowin)<span class=\"s1\"><span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<p class=\"p4\">Salade :<\/p>\n<p class=\"p4\">1 courge musqu\u00e9e moyenne (environ 4 tasses)<\/p>\n<p class=\"p4\">2 c. \u00e0 soupe d&rsquo;huile de canola<\/p>\n<p class=\"p4\">2 tasses de haricots blancs (tremp\u00e9s toute la nuit ou en conserve)<\/p>\n<p class=\"p4\">2 tasses de ma\u00efs frais, surgel\u00e9 ou en conserve<\/p>\n<p class=\"p4\">1\/2 tasse de persil hach\u00e9<\/p>\n<p class=\"p4\">Sel au go\u00fbt<\/p>\n<p class=\"p4\">Vinaigrette :<\/p>\n<p class=\"p4\">1 tasse d&rsquo;huile de canola (ou remplacer par de l&rsquo;huile de p\u00e9pins de raisin ou d&rsquo;olive)<\/p>\n<p class=\"p4\">1\/2 tasse de jus de citron<\/p>\n<p class=\"p4\">2 c. \u00e0 soupe de miel<\/p>\n<p class=\"p1\">Mettez les haricots tremp\u00e9s dans une casserole et couvrez d&rsquo;eau. Portez \u00e0 \u00e9bullition puis r\u00e9duisez \u00e0 fr\u00e9missement et laissez mijoter pendant 45 minutes. Ne salez pas l&rsquo;eau!<\/p>\n<p class=\"p1\">Une fois que les haricots sont cuits (ils doivent \u00eatre mous mais bien entiers), salez l&rsquo;eau \u00e0 votre convenance et mettez la casserole de c\u00f4t\u00e9. Cela permettra aux haricots d&rsquo;absorber un peu du liquide de cuisson. Note\u00a0: On ne les \u00e9goutte pas tout de suite car ils s\u2019ass\u00e8cheraient.<\/p>\n<p class=\"p1\">Pr\u00e9chauffez le four \u00e0 375F. \u00c9pluchez et enlevez les graines de la courge musqu\u00e9e. Coupez en cubes de 1\/2 pouce. Assaisonnez de sel, arrosez d&rsquo;huile de canola et m\u00e9langez. \u00c9talez les cubes de courge sur une plaque de cuisson recouverte de papier parchemin et faites r\u00f4tir environ 25 minutes.<\/p>\n<p class=\"p1\">Note : J&rsquo;aime quand la courge est l\u00e9g\u00e8rement grill\u00e9e car \u00e7a rehausse le go\u00fbt sucr\u00e9 du plat.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">Si vous utilisez du ma\u00efs surgel\u00e9, blanchissez-le dans de l&rsquo;eau bouillante, \u00e9gouttez-le, placez-le dans un bain de glace et \u00e9gouttez \u00e0 nouveau. Il n&rsquo;y a rien de pire que d&rsquo;avoir un exc\u00e8s d&rsquo;eau dans votre salade. En \u00e9t\u00e9, j&rsquo;aime utiliser des \u00e9pis de ma\u00efs frais grill\u00e9s.<\/p>\n<p class=\"p1\">\u00c9gouttez les haricots et laissez-les refroidir au r\u00e9frig\u00e9rateur.<\/p>\n<p class=\"p1\">Pour la vinaigrette, ajoutez l&rsquo;huile, le jus de citron frais et le miel dans un bol et m\u00e9langez avec un m\u00e9langeur \u00e0 main pour \u00e9mulsionner. Ou, utilisez un bocal herm\u00e9tiquement ferm\u00e9 et secouez vigoureusement.<\/p>\n<p class=\"p1\">Dans un grand bol, ajoutez les cubes de courge r\u00f4tis, les haricots, le ma\u00efs, le persil et la moiti\u00e9 de la vinaigrette. M\u00e9langez le tout. Si la salade semble s\u00e8che, ajoutez plus de vinaigrette.
