Il ne s\u2019agit l\u00e0 que d\u2019un des plats qui ont fait du <b>Feast Caf\u00e9 Bistro<\/b> la r\u00e9f\u00e9rence pour savourer une cuisine d&rsquo;inspiration autochtone au Manitoba. Devenue restauratrice par passion, Christa Bruneau-Guenther est la propri\u00e9taire et chef de cuisine de ce restaurant florissant. Et, c&rsquo;est sa vision qui a marqu\u00e9 son succ\u00e8s. \u00ab\u00a0En mangeant ensemble, nous honorons nos relations, pr\u00e9servons notre histoire et partageons nos r\u00e9cits. Au menu, vous trouverez, entre autres, dor\u00e9, canard et lapin transform\u00e9s en des entr\u00e9es et plats sophistiqu\u00e9s. Le carpaccio de chevreuil au poivre est un filet roul\u00e9 dans du poivre concass\u00e9, du fenouil, du romarin et du piment, saisi, tranch\u00e9 et servi sur des micro-pousses garnies d&rsquo;huile d&rsquo;olive \u00e0 l&rsquo;ail r\u00f4ti et de parmesan. Le Colonizer Punch est fait avec du gin Empress et de la d\u00e9licieuse liqueur de fleur de sureau St. Germain.<\/p>\n<p class=\"p1\">Chez <b>Tea Horse Teas<\/b> dans le nord-ouest de l&rsquo;Ontario, le riz sauvage, l&rsquo;ingr\u00e9dient embl\u00e9matique, est transform\u00e9 en une boisson apaisante. Le riz sauvage r\u00e9colt\u00e9 de mani\u00e8re traditionnelle, provenant directement des lacs de la r\u00e9gion, est torr\u00e9fi\u00e9 puis combin\u00e9 \u00e0 une s\u00e9lection de th\u00e9s pour cr\u00e9er trois m\u00e9langes personnalis\u00e9s. Portant le nom d\u2019une soupe-repas faite de courge, ma\u00efs, f\u00e8ves rouges et gibier qui est au c\u0153ur de la culture culinaire wendat, le Sagamit\u00e9, sous la houlette de Niva et Steeve Wadohandik Gros-Louis, continue de s\u2019imposer sur la sc\u00e8ne culinaire autochtone.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p1\">L&rsquo;<b>Indigenous World Winery, <\/b>le<b> <\/b>premier \u00e9tablissement vinicole enti\u00e8rement autochtone de la Colombie-Britannique, puise des terres riches des vall\u00e9es de l&rsquo;Okanagan et de la Similkameen pour proposer des vins de classe mondiale. Ici, l\u2019ancienne culture syilx se fond harmonieusement dans la sc\u00e8ne viticole florissante gr\u00e2ce aux propri\u00e9taires Robert et Bernice Louie. Le m\u00e9lange Hee-Hee-Tel-Kin Red, du nom de leur plus jeune fils Trenton, pr\u00e9sente des notes de clou de girofle, de prune sucr\u00e9e et de vanille.
